2 T. yeast
1 pinch of sugar
1/2 cup warm* water
4 eggs beaten
2 sticks butter
1 cup water
2 t. salt
1 cup sugar
7-8 cups flour
In a small bowl mix yeast, 1/2 cup water and a pinch of sugar together then set aside to let it rise about 10 min.
Beat eggs in mixing bowl.
In saucepan heat butter, water, salt and sugar until sticks of butter are completely melted. You want mixture warm but not too hot.
Add butter mixture to eggs and beat.
Add half of the flour. Beat for 2 or 3 min.
Now add the yeast mixture and 3 more cups of flour. Mix it together and check to see how sticky the dough mixture is. You want it to feel sticky but be able to handle it at the same time. If needed add more flour until you have the right consistency.
Put into large bowl, cover with towel and set aside to rise**. Let it rise until it is double in size.
Punch down and take 1/3 of dough mixture. Roll out into 16-inch pizza circle. Use pizza cutter and cut like you would a pizza. Butter pieces and start from the widest side of the dough and roll in. Place on buttered pan. Let rise again until double in size.
Bake at 375 for 8 minutes or until golden brown.
*The warmer the water, the faster the yeast will rise Be careful to not have it hotter than 129 degrees or it will kill yeast.
**To help it rise faster put it in a warm area. I even like to turn oven on 350 for one minute before I put the bowl in. Turn oven off, place bowl in oven and let rise in warm oven.
